Inspired by Spain's reverence for vaca vieja, Vintage Beef raises its cattle in the traditional Galician style. Vintage cattle roam vast green Australian pastures and live long lives of 60 months or more, twice the age of regular cattle. This long maturation process brings out a rich depth of flavor and a developed grassiness with distinctive marbling. Sourced from farms in Southern Australia and Tasmania, Vintage Beef is exceptionally beefy, earthy, savory, and bold.
