Comté Bellecombe is a semi-firm, raw, cow's milk cheese from the Jura region of France, made using century-old techniques. Its complex, nutty, caramelized flavor is lingering but not sharp, with a combination of sweetness and saltiness. Comte is traditionally sold in large blocks and can be aged up to a year, while this cheese is aged for 4 months in a 200-year-old military fort. This Comte has a rich, nutty, fruitier, and flowery taste. Pairs well with Chardonnay.
