Elsa's Era 12 Year Balsamic Vinegar is produced through a traditional method originating from the Emilia-Romagna region of Italy. The process requires slowly fermenting cooked grape must before maturing and refining the resulting vinegar for 12 years in small caskets of oak. Era 12 Year Balsamic Vinegar shares its name with one of Elsa Estate's five farms, where the Mastri, Salamino, and Sorbara grapes that are used to make this organic product come from. Monari Federzoni was founded in 1912 when Elena Monari applied to be authorised to sell the balsamic vinegar of Modena in her grocery shop, fulfilling her true passion. When the authorities granted her permission to sell balsamic vinegar, it sparked the beginning of a long and prestigious story characterized by passion and quality, as Elena’s interest for local tradition slowly developed into a true business. Elena’s passed on her spot at the head of the business to her son Elio in the 60’s, and under his leadership the company boomed in going into the 70’s. Monari Federzoni became a worldwide phenomenon, as world-renowned chefs and industry journalists praised their Balsamic Vinegar. As Giovanni, Elio’s son, took charge of the company in the 80’s, Monari Federzoni continued to grow, as the company expanded and eventually opened a new production site in Solara Bomporto. His daughter, Sabina Federzoni, stepped up to head the company in 2006, and she celebrated the first centennial of the company in 2012. With four generations of wisdom and tradition, Monari Federzoni has combined its expertise developed over time with a passion inherited from its founder to become a standout for oil production and an exemplary “Made in Italy” success story in both international and domestic markets.
