Spanish style Soria chorizo by Dona Juana is made from chunks of pork loin, uncured bacon, and a blend of various spices highlighted by paprika and sweet pimentón. The presence of the pimentón gives this Soria chorizo its excellent flavor and deep rust-red color. This chorizo has been produced by grinding, mixing, and stuffing the sausage mixture into collagen casings, followed by fermentation and air drying in controlled drying until the product is optimally cured. The spices and process used gives this Soria chorizo its rich and smoky flavor.
