Starting with the smallest, most coveted section of the pork leg, Culatello is seasoned simply with sea salt, and then dry-cured in the cool, humid air of the Po River Valley in Italy. It has an exceptionally tender, silky texture and a rich flavor that perfectly complements wine or sparkling cider, equally at home on a charcuterie board, an upscale sandwich, or simply on its own.
