This delectable cheese is made by renowned cheesemaker Walter Rass, a unique variation on the traditional Swiss Appenzeller made by altering the cooking temperature, using unskimmed milk, and crafting his own rennet. Aged for at least 10 months in cheese cellars, Challerhocker gets its name from this cellar-aged process, which develops its flavor into a rich but appcoachable cheese with nutty, brown butter, and caramel notes.Priced by the Pound (Catch Weight)
