Riojano chorizo by Dona Juana is a semi-cured sausage made from coarse chunks of marinated pork and seasoned with pimenton and garlic. This chorizo has been produced by grinding, mixing, and stuffing the sausage mixture into collagen casings, followed by fermentation and air drying in controlled drying rooms until the product is optimally cured. This process gives the chorizo a balanced and intense aroma with a pleasantly spicy flavor.

La Española Meats was founded in 1982 by Juana Gimeno Faraone and her husband Frank Faraone when Doña Juana could not find Spanish products in the US and decided to import them.
