Tetilla by Mitica is a traditional Gallego cheese with a distinct shape, mild flavor, and soft texture. The distinct shape of this cheese comes from the unique process used to make it. At the start of production, Tetilla is first cut into large grains and lightly pressed, before being hung in muslin bags. While it is hung during the aging period, the weight of the cheese allows it to form its unique teardrop shape.
