Pine Cone Bud Syrup by Primitivizia is a unique syrup that is bursting with pine flavor and the mountainous bouquet of gentle maple, rosemary, and wild herbs. Originating in the Dolomite Alps National Park of Trento, Italy, Pine Cone Bud Syrup by Primitivizia is made from the fragrant buds of Mugo Pine. The buds are macerated in sugar water during the warm summer months until it is time to filter them in September. The final step is to cook the resulting syrup over a low fire while adding additional sugar until it achieves the idyllic golden brown with thick viscosity that Pine Cone Bud Syrup by Primitivizia is loved for. Pine Cone Bud Syrup by Primitivizia is exceptional for drizzling over pork roast, grilled chicken, and very ripe cheeses, as well as using on gelato, yogurt, roasted fruits, as a substitute for maple syrup, and even martinis!Producer Spotlight
Primitivizia, a play on the words Primitive and Notizia ("news"), is owned by the brother and sister team of Giovanni and Eleonora Cunaccia. When they filed for their business application, they started a process which would take a year and a half and a change in the law in order for them to sell products made with wild and foraged goods. Once the process was complete and the business was ready, the sibling team had officially become the first business of the new business type known as Officina Botanica ("Botanical Office"). A nomad gatherer, Eleonora is one of the very few people in the country holding a special permit and license allowing her to gather certain herbs and spices from the wilderness for Primitivizia. After each daily harvest, which is carried out very meticulously, the crop of herbs is brought to Giovanni who uses a food processor, stove, and a pasteurizing bath to transform them into exceptional pastes with concentrated flavors.
