Produced through the cheese making traditions in the ancient Piave river’s surrounding area, Piave Vecchio is a full-bodied cheese with a flavor that intensifies as it ages. This Piave is made from hard curd cow’s milk. After pasteurization, the rennet is added in a large vat, worked into a paste, and put in molds, where they undergo a brine bath for 48 hours.
