Tete de Moine is made through a combination of raw cow’s milk with half-cooked or hard-pressed paste. A girolle is used to thinly shave away layers from the top of the cheese, making it easier and more effective to properly develop Tete de Moine’s taste. This production process makes the cheese semi-hard and gives it a dense texture and a distinct fruity flavor.
