Montasio Stagionato by Silano is made according to very strict DOP regulations to ensure consistent quality. Only the milk from a local red-spotted breed is acceptable, with an exception for a small number of Friesian and Alpine cows. The milk is put through a process that was developed over a century ago, which culminates in the cheese maturing in special storerooms with strictly controlled humidity and temperature conditions. As the cheese ages, it becomes drier and more flaky while transitioning from sweet to fragrant and slightly tangy.
