Established in 1982, Hudson Valley helped popularize foie gras in the United States, putting it on the culinary map nearly 30 years ago, and has since pioneered and produced the highest quality foie gras and Moulard duck products and practices. Hudson Valley farming takes place in Ferndale, New York, on 200 acres in the Catskill mountains, with the ducks living in spacious cage-free barns that protect them from the mountain’s freezing winters and wildlife predators. Moulard ducks are raised and processed on the farm, with each duck being evaluated by a US Department of Agriculture Inspector with strict guidelines for wholesomeness.
