    Taleggio by Carozzi is a DOP certified cheese made in accordance with tradition, using the best available Lombardia milk. Taleggio Stella Alpina has been seasoned in the Valsassina area for 35 to 40 days, developing a soft and thin crust, a rosy-brown color, and a unique combination of textures. Just beneath the crust Taleggio is soft and slightly stringy, while further inside it is firm and crumbly. This combination of textures and the tangy and fruity flavor of Taleggio is sure to please the most demanding of cheese lovers.
