• Cooking Suggustions: Grain-fed veal has a robust flavor and can be used in various veal sauces and dishes with minimal seasoning or sauce. To prepare veal strip loins, remove the silver skin and connective tissue, roast it whole or slice into medallions, cutlets, or chops. Avoid cuts thicker than 2 inches. Sear chops in a hot skillet until golden brown, then roast in a 350-degree oven until internal temperature reaches your desired level. Allow the chops to rest for a few minutes before slicing and serving.
