Poulet Rouge Chickens also known as redbro cou nu chicken, are a classic heritage breed highly esteemed for their distinctive flavor and fine skin texture. In comparison to the conventional breed, heritage poultry grows slower, yielding a much more flavorful bird overall. Their diet is entirely vegetarian, comprising only grains, with no animal byproducts involved. These chickens are leaner, enabling them to yield a richer and fuller flavor. To ensure their optimal quality, each bird is manually inspected and hand-processed, and then subjected to air chilling. Air chilling, despite being more costly than the usually adopted industrial water chilling, is more environmentally friendly.
