Members of the food industry for over 60 years, the Sarquis Family Group established Aura Olive Oil, which has also gone by the name of Austral Family Estates and Agroindustrial Siracusa, in Curicó Valley in 2006. After poring over the data, they came to the conclusion that this location, between the Pacific Ocean and Andes mountain range results in a climate with cold and wet winters and Mediterranean-like climate, made Curicó Valley an ideal location for growing olives. Aura Olive Oil managed to become Chile’s leading olive oil producer thanks to their dedicated workers maintaining strict quality standards as they spend 40 days and 40 nights harvesting olives over the orchard’s 1250 hectares, or almost five square miles, before sending them to be pressed within four hours of harvesting. The process takes place in Aura’s state of the art mill, which is capable of processing 400 tons of olives per day and has stainless steel tanks with a total capacity of 2.5MM liters. Aura understands that blending is a science and an art, and they are always working to produce exceptional oils that properly represent their place of origin. This dedication to olives in their purest form is evident in the high quality and unique tastes of Aura’s olive oils.
