    Dry cured Iberico de Bellota Solomillo is extremely tender, lean, and flavorful, with a savory and nutty flavor and a smoky hint of spice from the use of paprika during the curing process. This Solomillo is deep red in color with fat finely marbled throughout the loin, and a firm, supple texture.

    The purebred Ibérico pigs used for this Solomillo feast on acorns from Encina Oak trees for several months until they achieve the proper weight. The acorns the pigs eat, considered the sweetest in Spain, is the reason their meat is high in Omega-3 fatty acids and oleic acid, both of which are believed to help decrease bad cholesterol.
