Iberico de Bellota Lomito by Dehesa is an intensely flavorful meat that has a combination of sweet, savory, and nutty flavors. The special flavor of this Lomito was achieved by curing the meat for 90 days without paprika, allowing the deep meaty flavor of the underloin to shine on its own. Lomito is considered one of the most prized parts of the pig, with a deep pink color and fat that is finely marbled throughout.
The purebred Ibérico pigs used for this lomito feast on acorns from Encina Oak trees for several months until they achieve the proper weight. The acorns the pigs eat, considered the sweetest in Spain, is the reason their meat is high in Omega-3 fatty acids and oleic acid, both of which are believed to help decrease bad cholesterol.
