Manchego by El Trigal is a DOP cheese, which means that it can only be made from the milk of Manchega sheep, which graze in several provinces in the La Mancha region. Manchego uses same day milk and is very buttery. Manchego is even better when made with milk harvested between August and December, because the milk is at its richest during that period.
