Tart Dough Pascualina Large Hojaldre by Signo de Oro is also known as pate’ sucre’, pastry dough, sugar dough, or short dough, and is perfect for making sweet desserts such as fruit tarts and lemon curd, and can also be filled with cheese & spinach or ham & cheese, with many other possibilities.

    • Size: Large
    • Diameter: 12"
    • Dough Style: hojaldre (flaky) dough
    • Preparation type: Oven

Instructions: Remove from the refrigerator one or two hours before using it so that the dough obtains optimum elasticity. Separate the dough, place a disc on the mold previously greased with oil (slightly), place the filling, place the other lid and carry out the repulgue you want. Repulgue refers to a special method for crimping or folding the edges of the dough in order to close the tarta. To make it shine you can wash the dough with beaten egg yolk. Put in the oven very hot for 10 to 15 minutes approximately, until you reach the desired cooking.

    Signo de Oro

The beginnings of the Signo de Oro brand date back to the early 1940s, when Italian immigrant Sperandido Signo de Oro arrived in Buenos Aires, Argentina and worked in the Tuñín de la Boca to learn all about pastries. He soon began manufacturing artisanal tapas for empanadas, pascualinas, and cakes. In 1955 he was joined by his daughter’s husband Don Carlos Giganti, teaching him everything he knew and working together with him to master the art of tapas and empanadas together. After Don Sperandio died in 1979, Don Carlos, assisted by his wife and children, founded H Berolini SRL with the pillars of knowledge, perseverance, honesty, and quality he had learned from working with his father-in-law.
